A simple, authentic and original dish

INGREDIENTS (for 5 or 6 people)

For the mass:

  •      350 g flour 00
  •      150 g flour 0
  •      5 eggs
  •      25 g of ground coffee


For the sauce:

  • 250 g goat's cheese
  • 100 ml milk
  • 100 g cream for cooking
  • 75 g hazelnuts
  • 100 g butter to mix with pasta
  • 5 g of coffee powder

PREPARATION

To prepare the noodles, in a bowl sift the flour mixed with the coffee powder. Add 5 eggs to the mixture.
Knead for 5 minutes to form a compact and uniform paste.
Put in a film and let stand for one hour.
Stretch the dough on a wooden board and with the pasta machine make the noodles.
Cut the goat cheese into slices and put it in a saucepan with the milk and the cream.
Add salt and pepper to taste and mix ingredients until smooth and thick.
Cook the noodles. Mix with butter and chopped hazelnuts once they are herbicidal. 


PRESENTATION

Pour the cheese sauce into a dish with the tallarinis, sprinkle with the hazelnuts and the coffee powder.
Serve the noodles mixed with cream and cheese.
